CARROT AND WALNUT BREAD

  1. Preheat oven to 180°C. Line a bread tin with baking paper. Place raisins in a small bowl, then cover with water and set aside. In another bowl, add both flours, baking powder, Organic Road Cinnamon, and allspice, mixing well to combine. In a third, large bowl, beat eggs, then mix through honey and olive oil.
  2. Combine dry ingredients into the bowl with wet ingredients, then add grated carrot, shredded coconut, soaked raisins (including water) and walnuts, mixing until well combined. Pour mixture into lined bread tin and bake for 40 minutes or until golden brown on top and cooked all the way through.
