Blueberry Pie Pancakes

INGREDIENTS
- 1/3C oat flour + 2T Organic Road rolled oats
- 1T Organic Road coconut sugar or xylitol
- 1/2t Organic Road cinnamon
- 2/3t baking powder
- 1/8t Natural Road salt
- 1T olive oil
- 1/4C milk of your choice
- 1/2t vanilla extract
- 1/2C fresh or frozen blueberries
METHOD
- Combine dry ingredients in a bowl, then add wet, (except blueberries) until just combined. Mix, but don’t overmix. Gently stir through blueberries.
- Drop a heaped tablespoon of batter in a lightly greased non-stick pan on low-medium, flipping each pancake once. Top with syrup, powdered sugar, or coconut whipped cream. Or you could even boil some more blueberries (with a bit of coconut sugar or xylitol, if you wish), and smash them, to make a compote.
TIP: You can reduce the fat content by replacing the oil with apple puree
