Blueberry Pie Pancakes

These versatile pancake are not only light and fluffy, they’re a delicious way to get a variety of fruits into your diet. Try these sweet pancakes drizzled with blueberries for a breakfast treat the whole family will love.

INGREDIENTS

METHOD

  1. Combine dry ingredients in a bowl, then add wet, (except blueberries) until just combined. Mix, but don’t overmix. Gently stir through blueberries.
  2. Drop a heaped tablespoon of batter in a lightly greased non-stick pan on low-medium, flipping each pancake once. Top with syrup, powdered sugar, or coconut whipped cream. Or you could even boil some more blueberries (with a bit of coconut sugar or xylitol, if you wish), and smash them, to make a compote.

TIP: You can reduce the fat content by replacing the oil with apple puree
