SPICED WALNUT AND DATE BLISS BALLS

SERVES: Makes approx 20 balls

INGREDIENTS

METHOD

  1. Place dates, sultanas, vanilla powder, Organic Road Cinnamon, allspice, ground cloves and lemon juice and zest in a large bowl. Add 200ml hot water and mix together until dried fruit is coated in spices. Set aside to soak for 30 minutes.
  2. Meanwhile, add walnuts to a blender and blend until a crumb-like texture forms. Transfer to a flat plate or board and set aside.
  3. Transfer dried fruit and spice mixture into the blender and blend until a smooth paste forms. Return the paste to the bowl, then add the Organic Road Coconut Oil and almond meal, mixing well to combine. If it’s a cool day, melt the Organic Road Coconut Oil over low heat beforehand.
  4. Using a teaspoon, scoop up a small amount of mixture, roll between your hands to form a small ball the size of a cherry tomato, then roll in walnut crumbs. Place bliss ball on a flat tray and repeat process until you have used up the mixture. Place tray in the fridge for a couple of hours or until bliss balls have firmed up, then serve.
